This recipe is so easy, but the result is beautiful and tasty.
The idea behind this to to create a low calorie, low fat creamy silky mousse/New York cheese cake style pie.
I haven't found a low calorie, low fat way to make the pie crust. So I directly use Oreo pie crust. Any other graham cracker pie crust should work.
Ingredients:
200 gram silky tofu
200 gram non fat greek yogurt
1 6oz Oreo pie crust
5 gram Gelatin
1.5 tbsp matcha powder
(Optional: 20 gram Erythritol)
Instructions:
1. Put the tofu and yogurt (and Erythritol) into a big container. Blend them well until no clumps in the mixture.
2. Dissolve 5 gram of gelatin using 1~2 oz of hot water.
3. Add the fully dissolved gelatin liquid into the tofu&yogurt mixture, sieve in 1 tbsp matcha powder, blend well.
4. Pour the mixture from step3 to the pie crust, reserve 1~2 oz for the marble.
5. Sieve in 0.5 tbsp matcha powder in the leftover mixture, blend well.
6. Dot the mixture from 5 on top of current mixture in the pie, use a fork/chopstick to draw some pattern.
7. Refrigerate for 2~3 hours.
