Zoodle Chicken Chasiu Shoyu Ramen



Past week was an intense week at work. After work days like those, a bowl warm ramen is always comforting.

To keep the ramen low calorie, I use zoodles - zucchini noodle to replace the ramen noodle. Broth I use clear chicken broth, adding in shoyu sauce. I made chicken breast chasiu instead of the usual fat pork belly chasiu.

One bowl of this ramen is only about 200 KCal, with a lot of protein and fiber.


1. Boil the egg, chicken breast and bamboo shoot

2. Combine 1 oz shoyu soy sauce, 1 oz mirin, a little garlic power, a little smashed ginger, marinate the egg, chicken breast and bamboo shoot for 1+ hours.

3. Boil the zoodle for 2 min. Drain the water. Put the zoodle into the ramen bowl.

4. Make the ramen soup - combine 1 cup of chicken broth, the marinating sauce from step 2 and bring to boil. Then pour the soup into the ramen bowl.

5. Cut the egg, chicken breast and bamboo shoot and place them on top of the zoodle.
